Over-stuffed Cabbage

This one was a little ify at first, I wasn't sure how he would feel about it. Rice is a weird one for him, sometimes he will eat it and sometimes he gags at it. He wound up actually liking it and said it reminded him of spaghetti(his favorite food) a little.


Ingredients:

6 leaves of a large cabbage

1 can Tomato paste

1/2 jar of traditional pasta sauce (lidl brand)

1 tblsp oregano

1 tblsp garlic

2 tsp rosemary

Salt and pepper

Parsley

1/2 finely diced onion (if you know, you know)

1 cup jasmine rice

Shredded cheese of your choice

Beef broth

1 lb ground beef or turkey (we've done both)


Directions:

Set oven to 400°. Add 2 cups of beef broth to a pot and bring to a boil. Add jasmine rice to the broth, reduce heat and cook for 15 minutes. Wash, dry and halve cabbage leaves. Boil water and add cabbage leaves to soften, 5 minutes (we like ours on the crunchy side). In a large/deep pan add olive oil (or whatever you use), when warm add onion and cook until fragrant. Add ground beef and season with oregano, garlic, rosemary, salt and pepper. Cook the meat, breaking it up until the pink is completely gone. Drain meat once it is cooked and put back in pan. Add tomato paste, half of a can of water and 1/4 of the jar of pasta sauce to the meat and mix it, then fold in the rice. Get a baking dish (ours are non stick). Lay out one cabbage leaf half at a time and fill with a scoop of meat then roll it up. Make sure to put them seam side down, we didn't use toothpicks. Any remainder meat we put around the cabbage rolls. Pour 1/4 of the pasta sauce over the cabbage and tip with cheese. Sprinkle with parsley. Place in oven and cook for 10 minutes.


Writing it all out, it seems like quite a lot but it wasn't that bad and there were a lot of steps for Logan to do. Plus it teaches him to measure(bonus!). I know there are several variations of stuffed cabbage but this was easy for us and didn't take too long. As you know with ADHD paying attention to one thing for long periods is hard, there were enough little things to keep Logan's attention. If you want to make your own sauce I know that would taste great too!
